It’s finally Bo Time in the desert. Bojangles — the North Carolina institution behind the Cajun Filet Biscuit, seasoned fries, and legitimately scratch-made buttermilk biscuits — is opening its first Arizona restaurant, and every Southern transplant in the East Valley has been counting the days. The chain announced its Arizona expansion back in March 2024 with a 20-restaurant commitment to the Phoenix metro, and after two years of land deals, permitting, and one delayed opening date, the first store is about to unlock its doors in Gilbert.

Opening Day: What to Expect on July 20

Doors open at 5:00 AM sharp on Monday, July 20, 2026 — and yes, that early start is intentional, because Bojangles is a breakfast-first chain and it’s also monsoon-season Arizona, where 5 AM is the only civilized hour to stand in a line outdoors. The company told local media it expects 1,000 to 1,500 customers on day one.

The store had one delay already — it was originally slated for July 14 before the company pushed a week to finish the build-out — so if you’re driving far, sanity-check the date on Bojangles’ official site or social channels that morning.

The Arizona Menu — And the One Change Southerners Won’t Love

Most of what made Bojangles famous is coming intact: scratch-made buttermilk biscuits baked throughout the day, the Cajun Filet Biscuit, seasoned Bo-Fries, Bo-Berry Biscuits, dirty rice, and the legendary sweet tea, brewed the proper Southern way. The chicken itself may land even better here than back east — the seasoning blend on the tenders and filets includes southwestern chili peppers, which is about as on-brand for an Arizona palate as a national chain gets. There are seven dipping sauces for those who insist, though the crew’s position is that properly seasoned chicken doesn’t need any.

If you’ve never had Bojangles at all, the order that converts first-timers is simple: a Cajun Filet Biscuit, Bo-Fries, and a half-gallon of sweet tea you’ll pretend is for the whole family.

Why Bojangles Picked the Valley — and Gilbert First

The Arizona expansion is part of Bojangles’ broader push west of the Mississippi, driven by a franchise deal with LVP Restaurant Group and Kingsbarn Realty Capital announced in March 2024. The operators bought the Gilbert land from Diversified Partners, a Scottsdale-based commercial real estate firm, and broke ground in September 2025. The site selection logic is textbook East Valley: the Val Vista corridor carries heavy daily commuter traffic between the 202 and the fast-growing neighborhoods of south Gilbert, and the surrounding zip codes are packed with exactly the demographic that moved here from somewhere with a Bojangles.

That’s not a small group, either. The East Valley has absorbed a huge share of Arizona’s transplant growth over the past decade, and every Southern chain that’s entered the market has been mobbed. A typical Bojangles employs roughly 100 people at full staffing; the Gilbert store is starting with 60–70 hires. Multiply the 20-store plan out and the chain’s Valley footprint means somewhere north of a thousand jobs over the buildout — a legitimately meaningful add for the metro’s fast-food labor market.

What’s Next: The West Valley Store and Beyond

Location two is already moving: the 99th Avenue & Indian School Road site on the Phoenix/Avondale line broke ground in early 2026 and is confirmed for a late summer 2026 opening. That store gives the West Valley its own Bojangles without a cross-metro drive — meaningful, because the Gilbert-to-99th-Avenue run is 45 minutes on a good day.

After that, 18 sites remain unannounced. Based on how the first two were placed — one anchor in each half of the Valley — expect the next wave to fill the gaps: the Mesa/Queen Creek corridor, Chandler, the I-17 corridor in north Phoenix, and Surprise/Peoria in the northwest are the obvious candidates given traffic patterns and available pad sites.
